Food forest tours and lunch

It is always a pleasure to share our knowledge and experiences in the Overtuin forest garden. This magic location is a great setting to tell the story of agroforestry, the importance of soil, the potential of a food transition and the need for more connection to the natural world.

Over a weekend, Renée, Clara and Tom ran food forest tours and lunches. There was a particular focus on ramsons, also called wild garlic (Allium ursinum), - as the Overtuin is resplendent with this plant at this time of the year.

After a tour of the forest garden, visitors were invited to get to know the ramson plant. Armed with magnifying glasses, people took a closer look at the elements of ramson. And they were taught how to identify and forage this plant.

Throughout the day there were several different courses for visitors. Crackers with quince jam and fresh flowers, water kefirs of various flavours, fresh food forest salad and, of course, a cornucopia of ramson goodies. This included fresh wild garlic pesto, fermented wild garlic leaves, pickled wild garlic buds, pickled wild garlic stalks and flatbread made using fresh wild garlic leaves.

Everyone left with a smile, more knowledge and, perhaps, a slightly different perspective on the wider and wilder world.
