South African Yellowtail amberjack (Seriola Lalandii) is a highly resilient, rapidly growing and fast breeding species. Stock assessments indicate populations are healthy and not subject to overfishing. The firm, pearl-white meat has a mild to strong flavour. On account of its high oil content, the fish has a buttery texture and is an excellent source of Omega-3 fatty acids.
