Low-tech mushroom cultivation techniques have been investigated to convert agricultural waste products of the Sucumbios region (sawdust, sugarcane bagasse, coffee pulp, etc.) into highly nutritious and delicious mushrooms full of protein, minerals, and micronutrients. Mushroom cultivation is a compelling alternative to cattle farming for its competitive protein content, where cattle ranching is the largest driver of deforestation in every Amazon country, accounting for 80% of current deforestation rates. Mushrooms can provide for family consumption and an added profit is a promising solution for our target groups towards food sovereignty, unemployment, malnutrition, and economic independence while coexisting with intact forests. People can see and experience first-hand the methods to convert agricultural waste-products into a protein-rich food that is sustainable and delicious.
