The goal is to build a tiny cheese factory as a part of our small scale farm at Veľký Lél Island. The farm is focused on nature protection, traditional regenerative management and maintaining biodiversity. The pasture is extensive and the cattle help boost biodiversity, suppress invasive species and overgrowing of important habitats. The animals spend most of the year outside.
Building the factory supports local employment, promotes sustainable ecotourism in the area and most importantly creates an important step towards self-sufficiency of the farm, since profit is not the aim of the farm. However, funding is needed to sustain infrastructures, provide food for animals during dry years when there is a lack of hay and guarantee salary for employees that are taking care of the farm. Producing products like cheese help to support the farm as well as spread awareness about sustainable management and its impact on the environment.
For the main infrastructure a shipping container is going to be used which ensures the best value for money. The equipment will be suitable for small production. Fresh plain and flavored cheeses will be produced. For the flavoring the wild herbs (wild garlic and chives, meadow sage) as well as herbs grown in a herb spiral, which construction is a part of the project, will be used.
