Transport of the cacao
The dried cacao beans are transported to a central collection centre of APODIP.

The cacao production, harvest and processing happens under a constant tecnical supervision and quality control by APODIP.

Drying process
After fermentation, the cacao beans are carefully dried. During stable weather conditions the drying can take place outside in the sun. Internal drying offers a higher protection from rain, insects and fungi.

Cacao fermentation
The frestly harvested cacao beans are prepared for fermentation. Due to the small size of the beans, a high fermentation rate is reached.
